If you’re planning a trip to Maui and love Japanese cuisine, you’re in for a treat. Two high-end Japanese restaurants have recently opened in Wailea, offering unique dining experiences that blend traditional techniques with Hawaiian flair. Let’s dive into what makes each of these spots special and help you decide which one suits your palate.

Nobu Grand Wailea: A Global Brand Meets Island Luxury

Nobu has finally landed on Maui, opening its doors at the Grand Wailea, A Waldorf Astoria Resort. This marks the brand’s first location on the island and brings with it the signature fusion of Japanese and Peruvian flavors that Nobu is renowned for.

Nobu Grand Wailea officially opened on April 15, 2025, marking the brand’s debut on Maui.

The restaurant boasts over 13,000 square feet of indoor and outdoor dining space, designed by the acclaimed Rockwell Group. Expect panoramic ocean views, striking murals, and a grand imperial staircase that sets the tone for an opulent dining experience.

Signature dishes include the iconic Black Cod with Miso, Yellowtail Jalapeño, and Rock Shrimp Tempura. The menu also features Maui-exclusive offerings like a Kona Coffee-infused tres leches cake and a pavlova made with Oahu’s Laie Vanilla and blood orange sorbet .

Executive Chef Kyle Marston, a decade-long veteran of Nobu, leads the kitchen, ensuring that the culinary standards meet the brand’s global reputation.

KOMO at Four Seasons Resort Maui: Intimate Omakase with a Hawaiian Twist

Just down the road, the Four Seasons Resort Maui at Wailea has unveiled KOMO, an intimate 50-seat restaurant that offers a sushi-centric menu under the direction of Tokyo-born Chef Kiyokuni “Kiyo” Ikeda. With 25 years of experience, including time at Morimoto, Chef Ikeda brings a blend of traditional Japanese techniques and contemporary vision to the table .

KOMO at Four Seasons Resort Maui at Wailea opened earlier in the year, with its debut announced on February 4, 2025.

KOMO’s design, by Atelier Pond, draws inspiration from Maui’s landscape, incorporating elements like lava stone and quartzite to create a space that feels both modern and connected to the island. The 14-seat interactive sushi bar is the centerpiece, offering guests a front-row seat to culinary artistry.

One of the standout features is the weekly “Mystery Box” deliveries from Japan’s Misaki Megumi Suisan market, introducing rare seafood varieties for spontaneous omakase creations. This element of surprise adds an adventurous twist to the dining experience.

Comparing the Two: Which One is Right for You?

  • Ambiance: Nobu offers a grand, luxurious setting with expansive ocean views, ideal for those looking to indulge in a globally recognized dining experience. KOMO provides a more intimate atmosphere, perfect for guests seeking a personalized and interactive meal.
  • Menu: Nobu’s menu features its classic fusion dishes with some Maui-exclusive items, catering to fans of the brand and those looking for familiar favorites. KOMO focuses on traditional sushi and omakase, with an emphasis on rare and seasonal ingredients, appealing to purists and adventurous eaters alike.
  • Experience: If you’re celebrating a special occasion or want to experience a world-renowned restaurant, Nobu is the place to be. For a more relaxed yet refined evening centered around sushi craftsmanship, KOMO offers a unique and memorable experience.
